Creamy Ginger Yam & Spinach Soup

Sometimes the right instrument changes everything.  Here is an example of the easiest most delicious impromptu soup!  I find that tools are often quite helpful when eating a healthful diet.  The right tool can make meal making very quick and easy.  So dear, friends, this winter, purchase a hand blender, if you haven't one already.  Creamy, healthful and delicious soups are on their way to you in abundance if you do!

All you need to do to make a fabulous soup is grab some veggie stock (even better make some yourself.  A fabulous tip I received from a friend of mine is to freezeyour compost and use it later to make vegetable stock!) and any veggies that catch your eye on your next shopping trip.  Today mine was spinach and yams.

My personal tip for making anything delicious (and dietarily therapeutic) is adding onion, garlic and ginger, which is what I did for this soup, but you can really use whatever you like.

Creamy Ginger Yam & Spinach Soup

My ingredients and loose measurements were:

2-4 cups vegetable broth
1 tbsp butter or coconut oil
Big bunch of spinach
2 yams, peeled and cubed
2 cloves garlic, roughly chopped
1 leek or onion, chopped
1 small stem of fresh ginger – about 1.5 tsp
Sea Salt and freshly ground pepper to taste
Pinch of nutmeg

In a large pot on medium heat melt butter or oil, add onion and allow to cook for about 5 minutes until soft, stirring occasionally.  Add spices, ginger and garlic, spinach and stir.  Pour in the vegetable broth and bring to a boil.  Add the yam (sweet potatoes, potatoes, turnips, carrots or any other veggies you have on hand - root veggies will make a sweeter soup) and simmer until yams are softened.  Remove from heat and use hand blender to blend mixture into a creamy soup.  Garnish with pumpkin seeds.  Enjoy!
